VEGAN COCONUT COOKIE DESSERT

This is probably our favourite dessert so far. The original recipe is not vegan and it is really common in Portugal.
So we decided to "veganize" it and the result is stunning. It doesn't last 1 day in the fridge 😀

Ingredients

  • 200 gr Vanilla "butter" cookies Vegan
  • 300 ml Coconut topping cream Vegan
  • 1 tbsp Coffee
  • Water To make the coffee

Instructions

  • Stir the cream for about 5 minutes to make sure that it is with no clumps.
  • Mix the coffee with hot water.
  • Soak the cookies one by one in the coffee and lay them on a plate next to eachother.
  • When the plate is full, add a tsp of the coconut cream over each cookie.
  • Now it is time to start soaking another round of cookies and place them over the layer that alredy is on the plate.
  • Repeat the process until you have no more cookies.
  • Cover the whole cake with the rest of the coconut cream, Also on the sides.
  • for the topping, we normally use scrambled coconut and hazelnuts.
    Leave it in the fridge for at least one hour.

Notes

Feel free to put whatever you like more on top. You can include fruits like strawberries or any other berries, kiwis, etc.
