Vegan Banana Bread

Imagine the scenario:
You are at home, bored on a cold rainy day, and you are wishing for a piece of banana bread and there is no one to bring it to you. BAM! You don't need it anymore because we have just created the easiest and fastest recipe ever. No eggs, no dairy, no animal products at all. This is our vegan recipe for the well known banana bread. Enjoy it.

Ingredients

  • 4 super riped small bananas or 3 big ones
  • 245 gr flour any that you like
  • 75 gr sugar or stevia (proportional)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch salt
  • 75 ml vegetal oil or coconut oil (melted), vegan butter or apple sauce
  • 1 tsp vanilla extract
  • 1 tsp cinnamon optional
  • chocolate chips optional
  • pecans or walnuts optional

Instructions

  • Pre-heat the oven at 180 degrees.
  • Smash the bananas in a bowl with a fork. No need to be super perfect.
  • Add the oil and the vanilla extract. Mix well with a spatula.
  • Add the flour, baking soda, baking powder and the salt. You can also add in this moment the cinnamon if you like it.
  • Mix until the flour is well incorporated. DO NOT MIX TOO MUCH otherwise the cake might not grow. The dough (mass) will be a bit thick and with some lumps.
  • Add the choco chips or nuts if you want to have more texture in the cake, and mix. Remember, not too much. Use always the spatula.
  • Prepare the form rubbing it with coconut oil. Add the dough and make it uniform in the form.
  • Baking it for around 45-50 minutes. Make the spagguetti test to be sure that it is already good.

Notes

 

  • you don't want to mix the mass to much otherwise it won't grow.
  • don't use a mixer at all.
  • cinnamon or the nuts are optional. We love to give more texture to the banana bread so we always mix something "crunchy" 😀
